I received a text about a date that my mom was going on from her boyfriend and he addressed her as "The GF" in the text rather than by her name or "your mom". This made me feel uncomfortable. Am I the only one who finds this strange?

As I don't know him, or her, or the details of their relationship, I have no context by which to judge. Abbreviations in text messages aren't unknown, and some adults find the terms boyfriend/girlfriend a bit cloying, so unless you are looking for something to hold against him, I wouldn't get too excited.
So yes, it's a little bit strange that you find it makes yo feel uncomfortable. There are probably better ways to assess the nature of their relationship, I suspect.
