I worked with this guy for a few months. We didn't get to talk much since our schedules overlapped. The times we did talk and interact was great. He left a few weeks ago and I never got a chance to possibly start anything with him. I do have his phone number since it was in our call list. I don't know whether to text him or just let it go. I am definitely not one to just jump in blind, I am so not brave in any sense of the word. Anyone have some advice??

Actually, you did have a chance; you had a few months. And so did he. And neither of you did anything. You need to think about that.
On the other hand, if you got on well, there's no reason not to stay friends, wherever that goes.
Do you know why he left? Does he have your phone number? Did you have any contact at all, outside of work before?

I think using a phone number only accessible from work might be inappropriate. Why not something less intrusive like social media?

I think Gina is right, that sounds a little intrusive. I would probably talk to him on facebook or twitter or something and see how he takes your communicating to him from there.
